I LOVE butternut squash! There is a produce stand on our way to church that we often stop at. We haven't stopped recently, but I've seen all their pumpkins and squashes out. I was thinking we'd stop this Wednesday, and get a few. :) If you look on allrecipe.com, there are lots of recipes for squashes. Have fun cooking!

Wow! It looks just like a pumpkin pie! I would have never thought of using butternut squash as a substitute for sweet potato and pumpkin. What a neat idea. Thank you, Hannah, for sharing your creative cooking with us. Maybe you could share some recipes too!

Hi Hannah,

A few weeks ago I posted a recipe for pumpkin apple muffins, my family LOVES them. Maybe you could try it out with the squash. Here is the link (just look at the bottom of the post):

I was just given two butternut squash a couple of days ago. I've been wanting to make pumpkin pie, but I really didn't want to go out and buy pumpkin. I think my predicament has been solved! Now to try it out! :oP Yum!

Butternut squash is delicious! I cook it in the microwave with a pat of butter where I removed the seeds and completely covered with plastic wrap for about 15 minutes. Comes out great every time. By the way, birds LOVE the seeds so we put them out on the platform feeder attached to a tree. I would have never thought of using the squash in place of pumpkin. I am going to try it soon! Thanks for the tip, Hannah! I love the variety of postings lately! :-)

I love butternut squash! Hadn't thought of making a pie out of it until I read your blog! I might just try it, since we love sweet potato pie.

Well, I'm glad this post inspired so many people! I hope everyone's baking turns out successfully. See the updated post for the sweet potato muffin recipe I used(from Taste of Home, with a few adaptations). Also, check out the photos of Courtney's creative carrot cooking.

Thank you, Randi, for reminding me of your delicious pumpkin muffin recipe. Yes, I will have to try them soon using the squash--we too loved the pumpkin version.
