Besides eating fresh blueberries over vanilla ice cream for the 4th of July, we have also made these delectable muffins. The original recipe is from Taste of Home magazine and is really for raspberries, but we have always used blueberries. They've become a favorite over the years.
Blueberry Lemon Muffins
- 2 cups flour
- 1 cup sugar
- 1 T. baking powder
- 1/2 tsp. salt
- 2 eggs, lightly beaten
- 1 cup light cream (or milk)
- 1/2 cup oil
- 1 tsp. lemon extract
- 1 1/2 cups fresh or frozen blueberries
In a large bowl, combine dry ingredients. In a separate bowl, combine wet ingredients; stir into flour mixture just until moistened. Fold in blueberries. Spoon into 18 greased or lined muffin cups. Bake at 400 degrees for 18-20 minutes or until golden brown. Makes 1 1/2 dozen.

Thank you for this recipe! I have ordered a 20 lb box of fresh blueberries from the amish so I will definitely try this recipe. I will also try it with fresh lemon juice since I don't have the extract. Thanks also for your picture of your garden. It inspires me to weed mine!

I'm sure you could try the fresh lemon juice, although unless it's more than a teaspoon, it might not end up tasting very lemony. You could try substituting it for part of the cream/milk, though, and see what happens.

part of the cream with lemon juice...sounds like it will be delicious! I think I'm going to try to sub honey for the sugar as I'm starting my diet AGAIN :-) tomorrow. I need to have something a little sweet to snack on when I get a sweet-tooth!

Hannah, I found out about this recipe from Jodi (The Deputy Domain) and the muffins are delicious! I actually made them twice this week! The first time I didn't have lemon extract so I used a bit of lemon juice. They were very good but didn't have that lemony flavor. I picked up some extract today and they were perfect!
