As promised, here are the goodies we enjoyed for our Easter meal.
- 3 cups cake flour
- 3 cups sugar
- 1 cup butter
- 1/2 cup shortening
- 1 cup milk
- 1/2 tsp baking power
- 5 eggs
- lemon or almond flavoring
- dash of salt
Cream softened butter, sugar, and shortening. Add eggs one at a time, beating well after each addition. Add milk and flour with baking powder and salt. Add flavoring. Bake at 350 for 1 hour, 10 minutes. Delicious served with strawberries and whipped cream.
By the way, do you notice anything odd about this picture of the slice of cake? In other words, that's not the way I eat my slices of pound cake as shown with the whipped cream first and strawberries on top. I like it the other way around. But...we have various members of the family who like it this way! Of course, it all tastes the same. :)
Chocolatetown Pie
- 9-inch unbaked pastry shell
- 1/2 cup butter, softened
- 2 eggs, beaten
- 2 tsp vanilla extract
- 1 cup sugar
- 1/2 cup all-purpose flour
- 1 cup semi-sweet chocolate chips
- 1 cup chopped pecans or walnuts
Prepare pastry shell; set aside. Heat oven to 350 degrees. In small mixer bowl cream butter; add eggs and vanilla. Combine sugar and flour; add to creamed mixture. Stir in chocolate chips and nuts; pour into unbaked pastry shell. Bake 45 - 50 minutes or until golden. Cool about one hour; serve warm. Garnish with whipped cream.

Mmm - I just had to come and check out this chocolate pie. I will definitely give it a try someday soon.
