At the request of a commenter, here is the recipe for Lime Jello Salad. If you are interested in the recipe for San Francisco Chicken, go here where we posted it for Easter earlier this year. :) A picture of my birthday cake is at left. Mom did a good job, didn't she?
Lime Jello Salad
- 1 box Lime Jello
- 1 3/4 cups boiling water
- 1 small can crushed pineapple
- 12 large marshmallows
- 1 cup heavy whipping cream, whipped
Drain pineapple. Count juice as part of water if desired. Dissolve Jello in hot mixture, then add marshmallows cut in small pieces and dissolve. Add pineapple. Partly congeal in refrigerator until thick. Fold in whipped cream, and put in molds or pan. Makes 10-12 servings.

I forgot to say that you can simply substitute mini-marshmallows if you don't want to cut the large ones. Also, you can substitute Cool Whip for the whipping cream - that's what we did this last time. Hannah just guessed how much to put - she wasn't sure how much 1 cup of cream makes when it's whipped. It turned out great though. :)
