In honor of the day, I made some GREEN desserts for church yesterday! One of them was Key Lime Cheesecake...I searched for this recipe after seeing a delicious looking cheesecake at Costco last week.
In the rush out the door, we didn't have time to take a picture of the finished product, but I did take one of what was left after we got home. :) I really liked it, but I love any type of key lime pie. In the comments on the All Recipes website, people were saying it was "VERY limey!" It seemed just normal to me. :)
Today we are having the leftovers of both the cheesecake and the Cool Whip Layer Dessert (with lime jello and green shamrocks on top) in celebration of all things Irish! Yay!

Happy St Patrick's Day - from an *actual* (ie I have the address, I have the passport!) [Northern] Irish person.
May you always have work for your hands to do.
May your pockets hold always a coin or two.
May the sun shine bright on your windowpane.
May the rainbow be certain to follow each rain.
May the hand of a friend always be near you.
And may God fill your heart with gladness to cheer you.
