Recently I pulled all of the carrots I'd planted earlier this spring, making room for a late summer planting of green beans. They are some of the better carrots of the seasons I've tried growing them, as in they are straight and thick and not twisted. I knew that a certain bird would have enjoyed all the fresh green tops, but, alas, they went into the compost this time. We have enjoyed the carrots already in numerous ways: raw; roasted along with beets, onions, and other vegetables; and in Marinated Carrots, a Solomon/Girotti family classic. I can't remember if we've given this recipe on the blog before, so I'm posting it below.

Marinated Carrots
8 cups sliced carrots, cooked
1 medium onion, sliced round
1 green pepper, chopped or sliced
1 can (or 1 cup) tomato soup
3/4 c. white vinegar
3/4 c. sugar
1/2 c. oil
1 T. worcestershire sauce
1 t. dry mustard
1t. each S & P
Combine all ingredients while carrots are cooking. Pour over cooled carrots and marinate 24 hrs (or atleast 5 hrs til chilled) before serving. Serve cold. Makes...lots.
I've had good success substituting olive oil and honey in this recipe.

I was just talking about Micah and Elizabeth today; my eldest son did not realize they had moved. Hope they are doing well.

What yummy-looking carrots! The only time I was able to grow carrots like that was when my daughter (then 6) spilled some seeds on the ground in late September. Next spring we pulled up some beauties. Maybe I should try that again on purpose.

Wow! Those are some big carrots!! Christopher wants to have a garden next year and hopefully I'll be able to post pics of great looking vegetables like ya'll grew! :)
