Randi is once again holding her recipe box swap, and this time the theme is lunchtime favorites. The recipe I'm posting is one that I found in my handy Taste of Home 2002 cookbook that I've mentioned before on the blog. There are a lot of great recipes in there! :)
This soup makes a really yummy lunch, especially on chilly fall and winter days. I usually half it for a lunch when it's just us 3 girls.
4 large baking potatoes (about 2-3/4 pounds)
2/3 cup butter
2/3 cup flour
3/4 teaspoon salt
1/4 teaspoon white pepper (I use black pepper...)
6 cups milk
1 cup (8 oz.) sour cream
1/4 cup thinly sliced green onions
10 bacon strips, cooked and crumbled
1 cup (4 oz.) shredded cheddar cheese
Bake potatoes at 350* for 65-75 minutes or until tender; cool completely. Peel and cube potatoes. In a large saucepan, melt butter; stir in flour, salt, and pepper until smooth. Gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from heat; whisk in sour cream. Add potatoes and green onions. (I usually just put the green onions on top instead of adding them to the main pot.) Garnish each serving with bacon and cheese. Yield: 10 servings.

All I can say about that recipe is....sounds delicious!!!!! Next time I get to visit you all, maybe that could be on the menu. :) Last time you served a delicious bean soup. Sure would LOVE to visit soon!
