Today's lunch menu consisted of (clockwise from foreground): sliced garden tomatoes paired with cucumbers and seasoned with oregano, dill, and citrus-flavored olive oil; just picked and shelled black-eyed peas seasoned with rosemary; zucchini squares (recipe on continuation page); and a bowl of tasty oranges, grapefruit, and garden raspberries.

Zucchini Squares
- 1/2 cup finely chopped onions
- 1 garlic clove, minced
- 3 cups thinly sliced zucchini (1 large)
- 1/2 cup olive oil
- 1/2 cup grated Parmesan cheese
- 1 cup Bisquick (we substitute 1 cup flour, 1 1/2 tsp baking powder, 1/4 tsp salt)
- 1/2 tsp salt and pepper (in addition to the salt above)
- 1 Tablespoon parsley
- 1 teaspoon oregano
- 4 eggs, lightly beaten

What a delicious lunch. Makes my mouth water. Our tomatoes are coming in but am still waiting on the rest of our garden. Seems to be slow this year.

It all looks delicious and beautiful. If our courgette plants ever get going and produce anything other than male flowers, I'll have to give that recipe a try - it sounds good.
